In 2001, we completed construction on a new state-of-the-art production facility, enabling us to control all aspects of wine making from grape growing to bottling, ensuring consistency and highest quality.
Winemaking is an art that is aided by science. Our approach to wine making can best be illustrated by the haiku:

Key to this intervention is a painstaking attention to detail and cleanliness, for sound grapes are often turned into ordinary or even bad wine by poor winemaking, filthy conditions, or winemaking mistakes.
Too many wines today smell wonderfully clean and varietal, but are too bitter and tannic, leaving dry, harsh notes on the finish. We make wines that are pleasing on the palate as well as the nose. A proper maceration regime coupled with longer than normal Oak aging are the keys.
As an added quality factor, all of our wines are sealed with Nomacorc, a synthetic closure that has all the attributes of natural cork without the chance of cork taint. No winery using natural corks can guarantee that none of their wines are tainted. It’s a game of Russian roulette you don’t play with Baily wines.
